Spaghetti Chicken Green Curry


I guess I was very late for St. Patrick's Day this year! It seemed like green should be everywhere including on this post. Curry would be the first thing when people think of Thai food right? Please tell me yes. And spaghetti is the first thing to think of for Italian/American, right?

Wouldn't it be more fun to combine the two together?!


I didn't do anything on St. Patrick's day. In fact, my boss from overseas was in town and I had to support him. That evening I had to take him to a casino in Snoqualmie. I guess I celebrated it at the casino! I didn't wear green and nobody dared to pinch me. I don't gamble. What was I supposed to do until the time to send him off at the airport?? Slot machine is an option! I'm pretty lucky with a slot machine. Not that I win lots of money, but I just lose less money! I got a free $50 to spend. I spent $30 on slot machines; $5 at a time. I lost the first $10 and got $1 in profit the 3rd time. I could have made $8 in profit on the 4th game if I would have stopped at the peak!

I ended up only losing $3! Hubby should be proud of me, eh? Can you imagine the gamblers playing like 4 figures on certain games? That is so unlike me - I calculated every penny for my profit/loss... haha. Money is like water at a casino.

I don't know how I ended up talking about a casino here but that's about it for my St. Patty's Day Celebration. Let's get back to the green food! Even though it doesn't look "green green", the name has green on it!



Spaghetti Chicken Green Curry
Yield: 6-8 green folks

Ingredients:
2 tablespoons green curry paste
3-4 teaspoons fish sauce
7 green Thai tomatoes, cutting crosswise, and then half
6 Indian eggplants, cutting crosswise, and then half
1 red bell pepper, lengthwise
2 chicken breasts, cubed
5 tablespoons chicken broth
1 canned bamboo shoots
1/4 cup green beans, cut to 1 1/2 inches
1 canned coconut milk
Bunch of Thai/Chinese basil
Black peppers
Chili flakes
1 lb spaghetti

Yep those are what we will dump in a pot!

















Cut all the vegetables and chicken

















Add 1 tablespoon of olive oil or vegetable oil and brown the chicken. Once it's done, add coconut milk, and curry paste. Break the paste and let it melt to the coconut milk. In a meantime, boil pasta in salted water.

















Add the Thai green eggplants and put a lid on to cover. Thai green eggplants take longer to cook than Indian eggplants and other vegetables. They taste bitter than Indian ones too. If you buy a green curry in Thailand, it will only have Thai green eggplants and small green tomatoes. Purple from Indian eggplants and red from red bell peppers make it more colorful.

















Cover it until green eggplants cook half way through about 15-20 mins

















Add all other vegetables, fish sauce, chicken broth, peppers, and chili flakes (depends on how spicy you like). Mix well and cover it for another 15 mins. Correction the taste. We don't put sugar because coconut milk has the sweetness itself. Turn off the heat. Put basil leaves and mix well. Thai/Chinese basil tastes different than American basil.

Mix spaghetti in a pot. Scoop it on a plate with the sauce and the meats on top. Garnish with fresh basil.
